Rosemary Focaccia Bread
1 1/2 tsp. active dry yeast
1 1/2 cups warm water
2 tsps. honey
1/2 cup chopped onion
3 tbsps. olive oil, divided
1/2 tsp. salt
1 tbsp. plus 2 tsps. minced fresh rosemary, divided
3-4 cups all-purpose flour (I substitute at least 1 cup with whole wheat flour)
1/2 tsp. kosher salt
In a large mixing bowl, dissolve yeast in water. Stir in honey and let stand for 5 minutes. Saute onion in 1 tbsp. olive oil until tender and add to yeast mixture. Add the salt, 1 tbsp. rosemary, 1 cup flour and 1 tbsp. oil; beat until smooth. Stir in enough flour to form a soft dough.
Turn onto lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in greased bowl, turning once to coat top. Cover and let rise (preferably in a warm place) until doubled, about 40 minutes.
Divide dough in half and pat each portion into a 9 inch circle. Place on a greased baking sheet, cover, and let rise for 35 minutes.
Brush with remaining oil, sprinkle with kosher salt and remaining rosemary. Bake at 375 for 25-30 minutes or until lightly browned. Cool on wire racks.
